Stuffed Artichokes

Ingredients:
- 4 large artichokes
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions:
- Trim the stems and tops of the artichokes. Remove tough outer leaves and trim thorny tips.
- In a bowl, mix breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, olive oil, lemon juice, salt, and pepper.
- Gently spread the artichoke leaves apart and stuff the breadcrumb mixture between the leaves.
- Place stuffed artichokes in a pot with enough water to cover the bottom. Drizzle with olive oil and lemon juice.
- Cover and simmer over medium heat for 45-60 minutes until the leaves are tender.
- Serve stuffed artichokes hot or at room temperature.
