Ingredients:
- 4 bone-in pork chops
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 cups beef broth
- 2 tablespoons all-purpose flour
- 1/2 cup heavy cream
- Fresh parsley, chopped, for garnish
Instructions:
- Season pork chops generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear pork chops until golden brown on both sides, about 3-4 minutes per side. Remove from skillet and set aside.
- In the same skillet, add sliced onion and cook until softened, about 3-4 minutes. Add minced garlic and mushrooms, and cook until mushrooms are golden brown.
- Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly.
- Slowly pour in beef broth, stirring to combine and scraping up any browned bits from the bottom of the skillet.
- Return pork chops to the skillet, nestling them into the sauce. Cover and simmer for 15-20 minutes, or until pork chops are cooked through.
- Stir in heavy cream and simmer for an additional 2-3 minutes.
- Garnish with chopped parsley before serving.
