Slow Cooker French Onion Soup

Ingredients:
- 4 large onions, thinly sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon sugar
- 1/4 cup dry sherry or white wine (optional)
- 8 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
- Baguette slices
- Gruyere cheese, grated
Instructions:
- In a skillet, melt butter and olive oil over medium heat. Add onions and cook until caramelized, about 20-25 minutes.
- Add garlic and sugar, cook for 1-2 minutes.
- Optional: Deglaze the skillet with sherry or wine, scraping up any browned bits.
- Transfer onion mixture to the slow cooker.
- Add beef broth, bay leaves, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Discard bay leaves.
- Preheat broiler. Ladle soup into oven-safe bowls. Top each with baguette slices and grated Gruyere cheese.
- Broil until cheese is bubbly and golden brown, about 2-3 minutes.
- Serve hot and enjoy!
