Lasagna Soup
On March 19, 2024 by userExperience the flavors of lasagna in a comforting soup form. This hearty recipe combines pasta, meat, tomato sauce, and cheese for a satisfying meal.
Ingredients:
- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 1 can (6 oz) tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley, for garnish
Instructions:
- In a large pot, brown ground beef or sausage over medium heat. Drain excess fat.
- Add diced onion and garlic, cook until softened.
- Stir in crushed tomatoes, beef broth, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer.
- Add broken lasagna noodles, cook until noodles are tender, about 10-12 minutes.
- In a small bowl, mix ricotta cheese with a ladle of hot soup until smooth.
- Ladle soup into bowls, top each with a dollop of ricotta mixture and shredded mozzarella cheese.
- Garnish with fresh basil or parsley.
- Serve hot and enjoy!
