Cinnamon Roll Cookies

Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until dough forms.
- In a small bowl, mix together brown sugar and cinnamon.
- Roll dough into small balls and flatten slightly.
- Place a pinch of cinnamon sugar mixture in the center of each cookie and roll dough around it, forming a ball.
- Place cookies on the prepared baking sheet and bake for 10-12 minutes, or until edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
