Cranberry Curd Tart

Ingredients:
- 1 9-inch pre-baked tart crust
- 2 cups fresh or frozen cranberries
- 1/2 cup water
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1/4 cup unsalted butter, cubed
- 1 tablespoon lemon zest
- Pinch of salt
Instructions:
- In a saucepan, combine cranberries, water, and sugar. Cook over medium heat until cranberries burst, about 10 minutes.
- Strain cranberry mixture through a fine-mesh sieve, pressing to extract juice. Discard solids.
- In a heatproof bowl, whisk egg yolks. Gradually whisk in hot cranberry juice.
- Place bowl over a pot of simmering water. Cook, stirring constantly, until mixture thickens, about 10 minutes.
- Remove from heat and stir in butter, lemon zest, and salt until smooth.
- Pour cranberry curd into pre-baked tart crust. Smooth the top with a spatula.
- Refrigerate tart until set, at least 2 hours.
- Serve chilled, optionally garnished with whipped cream or fresh cranberries.
