Chicken Noodle Soup

Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Sauté until vegetables are tender, about 5 minutes.
- Pour in chicken broth and bring to a boil. Add shredded chicken, egg noodles, and dried thyme. Reduce heat and simmer until noodles are cooked, about 10 minutes.
- Season with salt and pepper to taste. Remove from heat and garnish with fresh parsley before serving.
