Keto Creme Brulee

Ingredients:
- 2 cups heavy cream
- 1/2 cup keto-friendly sweetener (such as erythritol or stevia)
- 6 large egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons keto-friendly sweetener (for caramelizing the top)
Instructions:
- Preheat Oven:
- Preheat your oven to 325°F (163°C). Place 4 to 6 ramekins in a baking dish.
- Warm the Cream:
- In a saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove it from the heat.
- Mix Sweetener with Egg Yolks:
- In a bowl, whisk together the keto-friendly sweetener and egg yolks until well combined.
- Temper the Eggs:
- Slowly pour a small amount of the warm cream into the egg yolk mixture, whisking constantly. This helps to temper the eggs and prevent them from scrambling.
- Combine and Strain:
- Gradually add the remaining cream to the egg mixture, continuing to whisk. Add the vanilla extract and whisk until smooth. Strain the mixture through a fine-mesh sieve into another bowl to ensure a silky texture.
- Fill Ramekins:
- Pour the custard mixture into the ramekins, distributing it evenly.
- Bake in a Water Bath:
- Place the baking dish with the ramekins in the preheated oven. Fill the baking dish with hot water until it comes halfway up the sides of the ramekins. Bake for 30-40 minutes or until the custard is set but still slightly jiggly in the center.
- Chill:
- Remove the ramekins from the water bath and let them cool to room temperature. Then, cover and refrigerate for at least 4 hours or overnight.
- Caramelize the Top:
- Just before serving, sprinkle a thin, even layer of keto-friendly sweetener on top of each custard. Use a kitchen torch to caramelize the sweetener until it forms a golden-brown crust.
- Serve:
- Allow the caramelized topping to set for a minute, then serve your delicious Keto Creme Brulee.
