Gluten-free Zucchini Bread

Ingredients:
- 2 cups grated zucchini (about 2 medium-sized zucchinis)
- 1 1/2 cups gluten-free all-purpose flour
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 large eggs
- 1/2 cup coconut oil or vegetable oil
- 1 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins or chocolate chips (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (180°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Grate Zucchini:
- Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or paper towels and squeeze to remove excess moisture.
- Prepare Dry Ingredients:
- In a large bowl, whisk together the gluten-free all-purpose flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
