For the Peach Filling:
- 6 cups sliced peeled peaches (fresh or frozen)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
For the Gluten-Free Cobbler Topping:
- 1 cup gluten-free all-purpose flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder (gluten-free)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 3/4 cup buttermilk (or a non-dairy alternative)
For Topping:
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Peach Filling: In a large bowl, combine sliced peaches, sugar, cornstarch, vanilla extract, ground cinnamon, and salt. Toss until the peaches are well coated. Transfer the peach mixture to a greased 9×13-inch baking dish.
- Make the Gluten-Free Cobbler Topping: In a separate bowl, whisk together gluten-free all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt. Add the cold, diced butter and use your fingers or a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add Buttermilk: Pour in the buttermilk (or non-dairy alternative) and stir until just combined. The batter will be thick.
- Drop Batter onto Peaches: Drop spoonfuls of the cobbler batter over the peaches in the baking dish, spreading it out as evenly as possible.
- Combine Sugar and Cinnamon for Topping: In a small bowl, mix together the sugar and ground cinnamon for the topping.
- Sprinkle Topping over Cobbler: Sprinkle the sugar-cinnamon mixture over the cobbler batter.
- Bake: Bake in the preheated oven for 35-40 minutes or until the cobbler topping is golden brown, and the peach filling is bubbly.
- Cool Slightly: Allow the peach cobbler to cool slightly before serving.
- Serve: Serve warm on its own or with a scoop of vanilla ice cream or whipped cream if desired.
This gluten-free peach cobbler is a delightful treat, especially during peach season. Enjoy the sweet and fruity flavors with the comforting cobbler topping!
