Ingredients:
- 2 medium-sized zucchini
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/2 cup almond flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray (olive oil or non-stick)
Instructions:
- Preheat the oven: Preheat your oven to 425°F (220°C).
- Prepare the zucchini: Wash the zucchini and slice them into thin rounds, about 1/8 to 1/4 inch thick.
- Prepare the coating: In a shallow bowl, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Coat the zucchini slices: Dip each zucchini slice into the olive oil, ensuring it is well coated. Then, dredge it in the almond flour and Parmesan mixture, pressing gently to adhere the coating to both sides of the zucchini.
- Arrange on a baking sheet: Place a wire rack on a baking sheet and coat it with cooking spray to prevent sticking. Arrange the coated zucchini slices on the rack.
- Bake: Bake in the preheated oven for 20-25 minutes or until the zucchini chips are golden brown and crispy. Keep an eye on them to prevent burning.
- Cool and serve: Allow the zucchini chips to cool for a few minutes before serving. They will continue to crisp up as they cool.
- Optional: You can add additional seasonings to your liking, such as onion powder, cayenne pepper, or dried herbs.
These low-carb zucchini chips make for a delicious and satisfying snack. Enjoy them on their own or with your favorite dipping sauce!
