Ingredients:
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground cloves
- 1/2 cup shredded coconut (sweetened or unsweetened)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup canned pumpkin puree

- 1/2 cup coconut milk (canned, well-stirred)
- 1/2 cup chopped nuts (walnuts or pecans, optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Stir in the shredded coconut.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
