Gluten-free Crepes
On December 14, 2023 by userHere’s a simple and delicious recipe for gluten-free crepes. These crepes can be filled with sweet or savory fillings, making them a versatile and satisfying dish.
Ingredients:
- 1 cup gluten-free all-purpose flour
- 2 tablespoons granulated sugar (for sweet crepes) or omit for savory crepes
- 1/4 teaspoon salt
- 1 1/2 cups milk (dairy or non-dairy)
- 2 large eggs
- 2 tablespoons melted butter or oil
- 1 teaspoon vanilla extract (for sweet crepes) or omit for savory crepes
- Additional butter or oil for cooking
Instructions:
- Prepare Batter:
- In a blender or mixing bowl, combine the gluten-free all-purpose flour, sugar (if making sweet crepes), and salt.
- Add Wet Ingredients:
- Add the milk, eggs, melted butter or oil, and vanilla extract (if making sweet crepes). Blend or whisk until the batter is smooth and well combined.
- Rest the Batter:
- Let the batter rest for at least 30 minutes. This allows the flour to fully absorb the liquid and gives you a smoother consistency.
- Heat the Pan:
- Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter or oil to coat the pan.
- Cook the Crepes:
- Pour a small amount of batter (about 1/4 cup) into the center of the hot pan. Quickly lift the pan and swirl it around to spread the batter thinly across the bottom.
- Cook for about 1-2 minutes or until the edges start to brown. Use a spatula to flip the crepe and cook for an additional 1-2 minutes on the other side.
- Repeat:
- Repeat the process with the remaining batter, adding more butter or oil to the pan as needed. Stack the cooked crepes on a plate.
- Fill and Serve:
- Fill the gluten-free crepes with your favorite sweet or savory fillings. For sweet crepes, consider using Nutella, fresh berries, whipped cream, or powdered sugar. For savory crepes, you can fill them with sautéed vegetables, cheese, ham, or other savory ingredients.
- Enjoy:
- Serve the filled crepes immediately and enjoy!
These gluten-free crepes are a wonderful treat for breakfast, brunch, or dessert. The key to successful crepes is to ensure that the batter is well-rested, and the pan is adequately heated and greased. Experiment with different fillings to suit your taste preferences.
