Vegetarian Jajangmyeon Korean Black Bean Noodles

Ingredients:
For the Noodles:
- 4 servings of thick wheat noodles (Jajangmyeon noodles or udon noodles)
- Water for boiling
- Salt for seasoning the boiling water
For the Black Bean Sauce:
- 2 tablespoons vegetable oil
- 1 large onion, finely diced
- 2 medium-sized zucchinis, diced
- 1 large carrot, diced
- 1 small potato, diced
- 5 tablespoons black bean paste (Chunjang or Jajang)
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 2 cups vegetable broth
- 2 tablespoons cornstarch mixed with 3 tablespoons water (cornstarch slurry)
- Salt and black pepper to taste
For Garnish:
- Sliced cucumber (optional)
- Sliced radish (optional)
Instructions:
- Prepare the Noodles:
- Cook the thick wheat noodles according to the package instructions in a large pot of boiling salted water. Drain and set aside.
- Make the Black Bean Sauce:
- In a large wok or deep skillet, heat vegetable oil over medium heat. Add the diced onion and cook until softened.
- Add the diced zucchinis, carrots, and potatoes. Stir-fry for a few minutes until the vegetables start to soften.
- Push the vegetables to the side of the wok, creating a space in the center. Add the black bean paste to the center and stir-fry for a minute until it becomes fragrant.
- Mix the black bean paste with the vegetables, and add soy sauce, sugar, minced ginger, and minced garlic. Stir to combine.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10-15 minutes or until the vegetables are fully cooked.
- Slowly pour in the cornstarch slurry while stirring continuously until the sauce thickens. Season with salt and black pepper to taste.
- Assemble the Dish:
- Place a portion of the cooked noodles in each serving bowl.
- Spoon the black bean sauce over the noodles.
- Garnish and Serve:
- Garnish with sliced cucumber and radish if desired.
