Ingredients:

- 1 can (14 ounces) diced tomatoes, drained
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 carrot, grated
- 1 cup sliced mushrooms
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper, to taste
For the Cheese Mixture:
- 2 cups ricotta cheese
- 1 egg
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
Instructions:
1. Prepare the Slow Cooker:
- Grease the slow cooker insert with cooking spray or a small amount of olive oil.
2. Make the Sauce:
- In a large bowl, combine crushed tomatoes, diced tomatoes, chopped onion, minced garlic, diced bell pepper, diced zucchini, grated carrot, sliced mushrooms, dried oregano, dried basil, salt, and black pepper. Mix well.
