Vegan Jamaican Curry
Ingredients:
- 1 tablespoon coconut oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tablespoon Jamaican curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon thyme
- 1 scotch bonnet pepper, finely chopped (seeds removed for less heat)
- 1 large sweet potato, peeled and diced
- 2 carrots, peeled and sliced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or roti (for serving)
Instructions:
- Sauté Aromatics:
- In a large pot, heat coconut oil over medium heat. Add diced onion and sauté until softened.
- Add Spices:
- Stir in minced garlic, Jamaican curry powder, cumin, coriander, turmeric, thyme, and finely chopped scotch bonnet pepper. Sauté for 2-3 minutes until fragrant.
- Add Vegetables:
- Add diced sweet potato, sliced carrots, diced zucchini, and diced red bell pepper to the pot. Stir to coat the vegetables with the spice mixture.
- Cook Chickpeas:
- Add drained chickpeas to the pot and mix well.
