Vegan Split Pea Soup

Ingredients:
- 1 1/2 cups dried green split peas, rinsed and drained
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 6 cups vegetable broth
- 2 potatoes, peeled and diced
- Salt and black pepper to taste
- 1 tablespoon lemon juice (optional)
- Fresh parsley for garnish (optional)
Instructions:
- Rinse Split Peas:
- Rinse the dried split peas under cold water and drain.
- Sauté Vegetables:
- In a large soup pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes or until the vegetables are softened.
- Add Garlic and Spices:
- Add the minced garlic, dried thyme, dried oregano, and bay leaf to the pot. Stir and sauté for an additional 1-2 minutes until the garlic is fragrant.
