Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup corn kernels (fresh or frozen)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 can (28 ounces) crushed tomatoes
- 1 cup vegetable broth
- 1 cup textured vegetable protein (TVP) or your choice of plant-based protein (lentils, quinoa, or crumbled tofu)
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Optional toppings: avocado, cilantro, lime wedges, vegan cheese
Instructions:
- Sauté Vegetables:
- Set your Instant Pot to “Sauté” mode. Add olive oil and sauté the diced onion until translucent. Add garlic and sauté for another minute.
- Add Vegetables and Protein:
- Add the bell pepper, zucchini, corn, black beans, kidney beans, chickpeas, and your choice of plant-based protein (TVP, lentils, quinoa, or crumbled tofu).
- Season:
