- 1 cup (120g) cornmeal
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) unsalted butter, melted
- 2 large eggs
- 1 cup (175g) sweet corn kernels (fresh, frozen, or canned, drained)
- Optional: 1/4 cup honey for a sweeter touch
Instructions:
- Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, melted butter, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
