Ingredients:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 2 tablespoons honey (optional, for sweetness)
- 2 tablespoons vegetable oil or bacon fat (for greasing the skillet)
Instructions:
- Preheat your oven to 425°F (220°C). Place a 10-inch cast-iron skillet in the oven to heat while you prepare the batter.
- In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, eggs, melted butter, and honey (if using).
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Carefully remove the hot skillet from the oven and add the vegetable oil or bacon fat, swirling to coat the bottom and sides of the skillet.
- Pour the batter into the hot skillet and spread it evenly.
- Bake in the preheated oven for about 20-25 minutes or until the cornbread is golden brown on top and a toothpick inserted into the center comes out clean.
- Allow the cornbread to cool for a few minutes before slicing and serving.
