Ingredients:
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plain yogurt or sour cream
- 1 1/2 cups fresh or frozen blueberries
- Optional: Turbinado sugar for sprinkling on top
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.
- Cream Butter and Sugar:
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add Eggs and Vanilla:
- Beat in the eggs, one at a time, and then add the vanilla extract. Mix well.
- Combine Dry Ingredients:
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add Dry Ingredients Alternately with Yogurt:
- Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt (or sour cream), beginning and ending with the dry ingredients. Mix until just combined.
- Fold in Blueberries:
- Gently fold in the blueberries until evenly distributed in the batter. If using frozen blueberries, you can toss them in a little flour to prevent them from sinking to the bottom.
- Fill Muffin Cups:
- Spoon the batter into the prepared muffin cups, filling each about 2/3 to 3/4 full.
- Optional: Sprinkle with Turbinado Sugar:
- If desired, sprinkle the tops of the muffins with turbinado sugar for a crunchy top.
- Bake:
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cool:
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
