Ingredients:
- 2.5 to 3 pounds beef stew meat, cut into chunks

- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 pound mushrooms, quartered
- 1 bottle (750 ml) red wine (such as Burgundy or Pinot Noir)
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 pound small potatoes, halved
- Chopped fresh parsley for garnish
Instructions:
- Season and Sear Beef:
- Season the beef stew meat with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides. Transfer the browned beef to the slow cooker.
