Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup uncooked white rice
- 6 cups chicken broth
- 2 cups cooked chicken, shredded (you can use leftover cooked chicken or cook and shred boneless, skinless chicken breasts)
- Salt and black pepper to taste
- 1/4 cup fresh parsley, chopped
- Lemon wedges for serving (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5 minutes, or until the vegetables are softened.
- Add the minced garlic, dried thyme, and dried rosemary. Cook for an additional 1-2 minutes, until the garlic is fragrant.
- Stir in the uncooked white rice and cook for 1-2 minutes, allowing the rice to lightly toast.
