Yeast Doughnuts

For the Dough:
- 1 cup warm milk (around 110°F or 43°C)
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1/4 cup granulated sugar
- 3 1/4 cups all-purpose flour, plus extra for dusting
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 cup unsalted butter, softened
- 2 large eggs
For Frying:
- Vegetable oil for frying
For the Glaze:
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions:
- Activate the Yeast: In a bowl, combine warm milk and sugar. Sprinkle the yeast over the mixture, stir gently, and let it sit for about 5-10 minutes until frothy.
- Prepare the Dough: In a large mixing bowl, combine the flour, salt, and nutmeg. Add the softened butter and eggs to the activated yeast mixture. Pour this wet mixture into the dry ingredients. Mix until the dough comes together.
- Knead the Dough: Turn the dough onto a floured surface and knead for about 5-8 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.
- Roll and Cut the Doughnuts: Roll out the dough on a floured surface to about 1/2-inch thickness. Cut out doughnuts using a doughnut cutter or two round cutters (one larger for the outer shape and one smaller for the hole). Place the cut doughnuts on a floured surface or parchment paper.
- Let the Doughnuts Rise Again: Cover the cut doughnuts with a kitchen towel and let them rise for another 30-45 minutes until they puff up.
- Heat the Oil: In a deep, heavy pot, heat vegetable oil to 350°F (180°C). Use a thermometer to monitor the oil temperature.
- Fry the Doughnuts: Carefully place a few doughnuts at a time into the hot oil. Fry for about 1-2 minutes per side or until they are golden brown. Use a slotted spoon to remove them and place them on a paper towel to drain excess oil.
- Make the Glaze: In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Glaze the Doughnuts: While the doughnuts are still warm, dip each one into the glaze, coating both sides. Place them on a wire rack to allow excess glaze to drip off.
- Serve: Allow the glaze to set for a few minutes. Serve the doughnuts and enjoy them fresh!
