Ingredients:
For the Potato Mixture:
- 1 cup mashed potatoes (cooled)
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1/4 cup granulated sugar
- 2 teaspoons salt
For the Yeast Mixture:
- 1/2 cup warm water (110°F/43°C)
- 2 tablespoons active dry yeast
- 1 teaspoon sugar
For the Dough:
- 4 to 5 cups all-purpose flour
- 2 large eggs
For Brushing (Optional):
- Melted butter for brushing
Instructions:
1. Prepare the Yeast Mixture:
- In a small bowl, combine warm water, active dry yeast, and 1 teaspoon sugar. Let it sit for about 5-10 minutes until it becomes frothy.
2. Make the Potato Mixture:
- In a saucepan, melt butter over low heat. Add milk, sugar, and salt. Stir until sugar and salt are dissolved.
- Remove from heat and add mashed potatoes. Mix well and let it cool to lukewarm.
3. Combine Yeast and Potato Mixtures:
- In a large mixing bowl, combine the frothy yeast mixture and the lukewarm potato mixture.
4. Add Eggs and Flour:
- Add eggs and gradually mix in the flour, one cup at a time, until a soft dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Add more flour as needed to prevent sticking.
5. First Rise:
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until it doubles in size.
6. Shape the Rolls:
- Punch down the risen dough and divide it into equal-sized portions. Shape each portion into a ball and place them in a greased baking pan.
7. Second Rise:
- Cover the baking pan with a kitchen towel and let the rolls rise for another 30-45 minutes.
8. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
9. Bake:
- Bake the rolls in the preheated oven for 15-20 minutes or until they are golden brown.
10. Optional: Brush with Butter:
- If desired, brush the freshly baked rolls with melted butter for a shiny finish.
11. Cool and Serve:
- Allow the rolls to cool slightly before serving.
