Ingredients:
For the Cabbage Rolls:
- 1 large head of green cabbage
- 1 cup rice, uncooked
- 1 pound ground meat (beef, pork, or a mixture)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup beet greens, finely chopped
- 1 can (14 oz) crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup chicken or vegetable broth
For the Sauce:
- 1 can (14 oz) crushed tomatoes
- 1 tablespoon sugar
- 1 tablespoon white vinegar
- Salt and pepper to taste
Instructions:
- Prepare the Cabbage:
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage, and immerse the whole head into boiling water for about 3-5 minutes until the outer leaves become pliable. Remove the leaves and set aside. Repeat until you have enough leaves for the filling.
- Prepare the Filling:
- In a skillet, sauté the chopped onion and garlic until translucent.
- Add the ground meat and cook until browned.
- Stir in the chopped beet greens and cook for an additional 2-3 minutes.
- Add the uncooked rice, crushed tomatoes, tomato paste, paprika, salt, and pepper. Mix well and cook for another 5 minutes.
- Allow the filling to cool slightly.
- Assemble the Cabbage Rolls:
- Place a spoonful of the filling onto a cabbage leaf. Fold in the sides and roll it up tightly, similar to a burrito. Repeat with the remaining leaves and filling.
