Halupki Stuffed Cabbage

Ingredients:
For the Cabbage Rolls:
- 1 large head of green cabbage
- 1 pound (about 500g) ground beef
- 1/2 pound (about 250g) ground pork
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- Salt and pepper to taste
- 1/2 teaspoon paprika
- 1/4 teaspoon dried thyme (optional)
For the Tomato Sauce:
- 2 cans (15 oz each) crushed tomatoes
- 1 can (6 oz) tomato paste
- 1/4 cup brown sugar
- 2 tablespoons red wine vinegar
- 1 cup beef broth
- Salt and pepper to taste
Instructions:
- Prepare the Cabbage:
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage.
- Place the whole cabbage head in the boiling water and cook for about 5-7 minutes. As the outer leaves soften, carefully remove them with tongs and set them aside. Continue until you have about 12 large leaves.
- Trim the thick center vein from each leaf to make them easier to roll.
- Prepare the Filling:
- In a large mixing bowl, combine ground beef, ground pork, cooked rice, chopped onion, minced garlic, egg, salt, pepper, paprika, and thyme. Mix the ingredients until well combined.
- Assemble the Cabbage Rolls:
- Place a spoonful of the meat mixture onto the center of each cabbage leaf.
- Fold the sides of the leaf over the filling and then roll it up, creating a cabbage roll. Repeat until all the filling is used.
- Prepare the Tomato Sauce:
- In a separate bowl, mix together crushed tomatoes, tomato paste, brown sugar, red wine vinegar, beef broth, salt, and pepper. Adjust the seasoning to taste.
- Layer in a Baking Dish:
- Preheat your oven to 350°F (175°C).
- Spread a thin layer of the tomato sauce in the bottom of a baking dish.
- Place the cabbage rolls seam side down in the baking dish, packing them closely together.
- Pour the remaining tomato sauce over the cabbage rolls, ensuring they are well-covered.
- Bake:
- Cover the baking dish with aluminum foil and bake for about 1.5 to 2 hours, or until the cabbage rolls are tender.
- Serve:
- Serve the halupki hot, drizzled with some of the tomato sauce from the baking dish.
