Ingredients:
- 1 to 1.5 pounds pork tenderloin
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon honey (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Pork:
- Trim any excess fat or silver skin from the pork tenderloin. Pat the meat dry with paper towels.
- Season the Pork:
- In a small bowl, mix together olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and black pepper to create a spice rub.
- Rub the spice mixture all over the pork tenderloin, ensuring it’s evenly coated. If you like, you can let it marinate for about 15-30 minutes for more flavor.
- Sear the Pork (Optional):
- In a hot skillet, sear the pork on all sides for about 2-3 minutes per side. This step is optional but adds extra flavor and texture. If you skip this step, simply move on to the next.
- Optional Mustard-Honey Glaze:
- In a small bowl, mix Dijon mustard and honey. Brush this mixture over the pork tenderloin for added flavor and a shiny glaze.
- Roast in the Oven:
- Place the seasoned pork tenderloin on a roasting pan or a baking sheet lined with parchment paper.
- Roast in the preheated oven for approximately 20-25 minutes or until the internal temperature reaches 145°F (63°C).
- Rest and Slice:
- Allow the pork to rest for 5-10 minutes before slicing. This helps the juices redistribute, keeping the meat moist.
- Serve:
- Slice the pork tenderloin into medallions and serve with your favorite side dishes.
This pork tenderloin recipe is versatile and pairs well with a variety of sides, such as roasted vegetables, mashed potatoes, or a fresh salad. Enjoy your flavorful and tender pork!
