Low-carb Cheesecake

Ingredients:
For the Crust:
- 1.5 cups almond flour
- 1/4 cup melted butter
- 1 tablespoon Erythritol or another low-carb sweetener
For the Cheesecake Filling:
- 3 packages (24 oz) cream cheese, softened
- 1 cup Erythritol or another low-carb sweetener
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
Instructions:
For the Crust:
- Preheat your oven to 325°F (163°C).
- In a medium-sized bowl, combine the almond flour, melted butter, and sweetener. Mix until well combined.
- Press the mixture into the bottom of a greased 9-inch springform pan, creating an even crust.
- Bake the crust in the preheated oven for 10-12 minutes, or until it starts to turn golden brown. Remove from the oven and let it cool while preparing the filling.
For the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the sweetener and continue to beat until well combined.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract and sour cream until the filling is smooth and well incorporated.
- Pour the cheesecake filling over the baked crust in the springform pan.
- Tap the pan on the counter a few times to remove any air bubbles.
- Bake in the preheated oven for 45-50 minutes or until the center is set and the top is lightly browned.
- Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1-2 hours.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight before serving.
- Once the cheesecake is fully chilled, run a knife around the edge of the pan before removing the sides of the springform pan.
- Slice, serve, and enjoy your delicious low-carb cheesecake!
