Blueberry Pie

Ingredients:
For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cut into cubes
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 6-8 tablespoons ice water
For the Blueberry Filling:
- 6 cups fresh blueberries, washed and drained
- 1 cup granulated sugar (adjust based on sweetness of berries)
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
For Egg Wash (optional):
- 1 egg, beaten
- 1 tablespoon water
Instructions:
Pie Crust:
- In a food processor, combine the flour, sugar, and salt. Add the cold, cubed butter, and pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, pulsing between additions. Stop when the dough begins to come together.
- Turn the dough out onto a floured surface, divide it into two portions, and shape each into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Blueberry Filling:
- In a large bowl, gently toss together the blueberries, sugar, cornstarch, lemon juice, ground cinnamon, and salt. Let the mixture sit for about 15 minutes to allow the berries to release their juices.
Assembling the Pie:
- Preheat the oven to 400°F (200°C).
- Roll out one portion of the chilled pie crust on a floured surface to fit a 9-inch pie dish.
- Place the rolled-out crust in the pie dish.
- Pour the blueberry filling into the crust, spreading it evenly.
- Roll out the second portion of the pie crust and place it over the filling. Seal and crimp the edges.
- If desired, create slits in the top crust for steam to escape.
- Optional: Brush the top crust with an egg wash (beaten egg mixed with water) for a golden finish.
- Place the pie on a baking sheet to catch any drips.
- Bake in the preheated oven for 45-50 minutes or until the crust is golden and the filling is bubbly.
- Allow the blueberry pie to cool completely before slicing.
Serve the blueberry pie on its own or with a scoop of vanilla ice cream for a delightful dessert.
