Sausage Strata

Ingredients:
- 1 pound (about 450g) bulk breakfast sausage (pork or turkey)
- 8 slices of bread, preferably a day or two old, cut into cubes
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 medium onion, finely chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 8 large eggs
- 2 1/2 cups milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- In a large skillet over medium heat, cook the sausage until browned and cooked through, breaking it into crumbles. Drain any excess grease.
- In a greased 9×13-inch baking dish, place half of the bread cubes.
- Sprinkle half of the cooked sausage over the bread cubes, followed by half of the cheddar, mozzarella, and Parmesan cheeses. Add half of the chopped onions and bell peppers.
- Repeat the layers with the remaining bread cubes, sausage, cheeses, and vegetables.
- In a bowl, whisk together the eggs, milk, Dijon mustard, salt, black pepper, and dried thyme.
- Pour the egg mixture evenly over the layered ingredients in the baking dish.
- Cover the baking dish with plastic wrap and refrigerate for at least 4 hours or overnight. This allows the bread to absorb the egg mixture.
- When ready to bake, preheat your oven to 350°F (175°C).
- Remove the plastic wrap from the baking dish and bake for 45-50 minutes, or until the strata is set and the top is golden brown.
- Allow the strata to cool for a few minutes before slicing.
- Garnish with chopped fresh parsley if desired and serve warm.
