One Pot Tortellini Bake

- 1 pound (about 450g) refrigerated cheese tortellini
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound (about 500g) ground Italian sausage (or ground beef or turkey)
- 1 can (28 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Sauté Onion and Garlic: In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened.
- Cook Ground Sausage: Add the ground Italian sausage (or your choice of meat) to the skillet. Cook until browned, breaking it up into crumbles with a spoon as it cooks.
- Add Crushed Tomatoes and Spices: Pour in the crushed tomatoes and add dried oregano, dried basil, dried thyme, salt, and black pepper. Stir to combine.
- Add Tortellini: Add the refrigerated cheese tortellini to the skillet, stirring to coat them in the sauce.
- Simmer: Allow the mixture to simmer for about 5-7 minutes, or until the tortellini are slightly tender but not fully cooked.
- Cheese Layer: Sprinkle shredded mozzarella cheese over the top of the mixture, followed by grated Parmesan cheese.
- Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the cheese is melted and bubbly, and the tortellini are fully cooked.
- Garnish and Serve: Remove from the oven, garnish with fresh basil or parsley if desired, and serve directly from the skillet.
