Ingredients:
- 4 large flour tortillas
- 6 large eggs
- 1/4 cup milk
- Salt and pepper, to taste
- 1 tablespoon butter or cooking oil
- 1 cup cooked and diced breakfast sausage or bacon
- 1 cup shredded cheddar or Mexican blend cheese
- 1 cup diced bell peppers (any color)
- 1/2 cup diced onions
- Salsa, guacamole, or sour cream for serving (optional)
- Fresh cilantro, chopped (optional)
Instructions:
- Prepare the Eggs:
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Cook the Eggs:
- In a large skillet, melt butter or heat cooking oil over medium heat. Pour in the egg mixture and scramble until cooked through.
- Prepare the Fillings:
- In the same skillet, cook the diced breakfast sausage or bacon until browned and cooked. Remove excess grease.
