On December 15, 2023 by userMaking a Saskatoon Serviceberry Rhubarb Pie combines the sweet and slightly tart flavors of serviceberries with the tanginess of rhubarb. Here’s a delicious recipe for you to try:
Ingredients:
For the Pie Filling:
- 3 cups Saskatoon serviceberries (fresh or frozen)
- 2 cups rhubarb, diced
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cut into cubes
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 6-8 tablespoons ice water
Instructions:
Pie Crust:
- In a food processor, combine the flour, sugar, and salt. Pulse to mix.
- Add the cold, cubed butter to the flour mixture. Pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, pulsing between additions. Stop when the dough begins to come together.
- Turn the dough out onto a lightly floured surface. Divide it into two portions, shaping each into a disk. Wrap them in plastic wrap and refrigerate for at least 30 minutes.
Pie Filling:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the Saskatoon serviceberries, rhubarb, sugar, flour, lemon juice, and vanilla extract. Toss until well coated.
Assembling the Pie:
- Roll out one of the chilled pie crust disks on a floured surface to fit your pie dish.
- Place the rolled-out crust into a 9-inch pie dish.
- Add the Saskatoon serviceberry rhubarb filling into the pie crust, spreading it evenly.
- Roll out the second pie crust and place it over the filling. You can create a lattice design or cover the pie entirely with the crust, cutting a few slits for ventilation.
- Trim and crimp the edges of the crust to seal the pie.
- Optional: Brush the top crust with a little milk or egg wash for a golden finish.
- Place the pie on a baking sheet to catch any drips and bake in the preheated oven for about 45-55 minutes or until the crust is golden brown, and the filling is bubbly.
- Allow the pie to cool before slicing.
This Saskatoon Serviceberry Rhubarb Pie is a delicious way to celebrate the flavors of the season. Enjoy it with a scoop of vanilla ice cream for an extra treat!
