Vodka Sauce

Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup vodka
- 1 can (28 ounces) crushed tomatoes
- 1 cup heavy cream
- 1 teaspoon red pepper flakes (optional, for heat)
- Salt and black pepper to taste
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- 1 pound penne or your favorite pasta, cooked according to package instructions
Instructions:
- Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add chopped onions and minced garlic. Sauté until the onions are translucent.
- Deglaze with Vodka: Pour in the vodka to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for a couple of minutes to allow the alcohol to cook off.
- Add Tomatoes: Stir in the crushed tomatoes, including the juice.
- Simmer: Allow the sauce to simmer over medium-low heat for about 15-20 minutes, stirring occasionally.
- Add Cream and Seasonings: Pour in the heavy cream and add red pepper flakes (if using). Season with salt and black pepper to taste. Simmer for an additional 5-10 minutes.
- Finish with Basil and Cheese: Stir in chopped fresh basil and grated Parmesan cheese. Let the sauce cook for a couple more minutes until the cheese melts and the basil is fragrant.
- Serve: Pour the vodka sauce over cooked pasta and toss until the pasta is well coated.
- Garnish (Optional): Garnish with additional Parmesan cheese and fresh basil.
