Ingredients:
- 8 oz (225g) linguine or your favorite pasta
- 1 pound (450g) large shrimp, peeled and deveined
- Salt and black pepper to taste
- 3 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- 1 cup cherry tomatoes, halved
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Lemon wedges for serving (optional)
Instructions:
- Cook the Pasta: Cook the pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.
- Season and Cook Shrimp: Season the shrimp with salt and black pepper. In a large skillet, heat 2 tablespoons of butter over medium-high heat. Add the shrimp and cook for 1-2 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Sauté Garlic and Tomatoes: In the same skillet, add the remaining 1 tablespoon of butter. Add minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant. Add halved cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
- Deglaze with Broth: Pour in the chicken broth to deglaze the skillet, scraping up any browned bits from the bottom. Allow it to simmer for 2-3 minutes.
- Add Cream and Parmesan: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Continue stirring until the cheese is melted and the sauce has thickened slightly.
- Combine Shrimp and Pasta: Add the cooked shrimp and drained pasta to the skillet. Toss everything together until the pasta is well coated in the sauce.
- Finish and Serve: Sprinkle chopped fresh parsley over the pasta. Season with additional salt and pepper to taste. Serve the garlic butter shrimp pasta immediately, garnished with lemon wedges if desired.
