Vegetarian Mushroom Gravy

Ingredients:
- 2 tablespoons unsalted butter or olive oil
- 1 pound (about 450g) cremini mushrooms, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour or almond flour for a low-carb option
- 2 cups vegetable broth
- 1 teaspoon soy sauce or tamari for depth of flavor
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
- 1/2 cup heavy cream or a non-dairy alternative (coconut milk or almond milk)
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Sauté Mushrooms and Onions:
- In a large skillet or saucepan, melt the butter or heat the olive oil over medium heat. Add the finely chopped mushrooms and onions. Sauté until the vegetables are softened and most of the moisture from the mushrooms has evaporated.
- Add Garlic and Flour:
- Add the minced garlic to the mushroom and onion mixture. Sauté for an additional minute. Sprinkle the flour over the vegetables and stir to coat evenly. Cook for 2-3 minutes to eliminate the raw taste of the flour.
- Deglaze with Broth:
- Gradually pour in the vegetable broth, stirring constantly to avoid lumps. Allow the mixture to come to a gentle simmer.
- Season and Simmer:
- Add soy sauce (or tamari), dried thyme, salt, and black pepper to the gravy. Reduce the heat to low and let it simmer for 10-15 minutes, allowing the flavors to meld.
- Add Cream:
- Stir in the heavy cream or non-dairy alternative. Simmer for an additional 5-10 minutes, or until the gravy reaches your desired thickness.
- Adjust Seasoning:
- Taste the gravy and adjust the seasoning as needed. Add more salt, pepper, or herbs if desired.
- Serve:
- Once the gravy has reached the desired consistency, remove it from heat. Serve it warm over mashed potatoes, roasted vegetables, or your favorite vegetarian dishes.
