Vegan Chocolate Cake

Ingredients:
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup brewed coffee, cooled
- 1/2 cup vegetable oil
- 2 tablespoons white or apple cider vinegar
- 1 teaspoon vanilla extract
For the Vegan Chocolate Frosting:
- 1/2 cup vegan butter, softened
- 1/4 cup cocoa powder
- 2 cups powdered sugar
- 2-3 tablespoons non-dairy milk (such as almond or soy milk)
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, mix together the brewed coffee, vegetable oil, vinegar, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- While the cakes are cooling, prepare the chocolate frosting. In a bowl, beat together the softened vegan butter, cocoa powder, powdered sugar, non-dairy milk, and vanilla extract until smooth and creamy.
- Once the cakes are completely cool, spread a layer of frosting on top of one cake layer. Place the second layer on top and frost the top and sides of the entire cake.
