- 1 large butternut squash, peeled, seeded, and cut into cubes
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil

- 1/2 teaspoon smoked paprika
- 4 cups vegetable or chicken broth

Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Roast the Butternut Squash: Place the cubed butternut squash on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the preheated oven for about 25-30 minutes or until the squash is tender and caramelized.
- Sauté Vegetables: In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add diced onion, chopped carrots, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

- Add Coconut Milk: Stir in the coconut milk (or heavy cream) to the soup. Simmer for an additional 5 minutes.
