Ingredients:
- 4 large potatoes, peeled and thinly sliced
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 pound fresh spinach, washed and chopped
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup milk
- 2 tablespoons all-purpose flour
- 2 tablespoons unsalted butter
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Potatoes: Peel and thinly slice the potatoes. You can use a mandoline for uniform slices.
- Sauté Onion and Garlic: In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
- Add Spinach: Add the chopped spinach to the skillet and cook until wilted. Season with salt, pepper, and dried oregano. Remove from heat.
- Prepare Cheese Mixture: In a saucepan, melt butter over medium heat. Stir in the flour to create a roux. Gradually whisk in the milk until smooth and thickened. Add the feta, mozzarella, and Parmesan cheeses. Stir until the cheeses are melted and the mixture is well combined.
- Layer the Casserole: In a greased baking dish, layer half of the sliced potatoes. Top with the spinach mixture, spreading it evenly. Pour half of the cheese mixture over the spinach layer. Repeat with the remaining potatoes and cheese mixture.
- Bake: Cover the baking dish with foil and bake in the preheated oven for about 40-45 minutes or until the potatoes are tender.
- Broil (Optional): If you want a golden crust on top, uncover the casserole and broil for an additional 5-7 minutes until the top is lightly browned.
