Ingredients:
For the Filling:
- 3 cups cooked chicken, shredded or diced
- 1 cup frozen peas
- 1 cup carrots, diced
- 1/2 cup celery, diced
- 1/3 cup unsalted butter
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried sage (optional)
- 2 cups chicken broth
- 1 1/2 cups milk
For the Topping:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup unsalted butter, melted
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large skillet, melt 1/3 cup of butter over medium heat. Add carrots, celery, and peas. Cook until the vegetables are slightly tender, about 5 minutes.
- Stir in the cooked chicken.
- Sprinkle the flour, salt, pepper, thyme, and sage over the chicken and vegetable mixture. Stir until well combined.
- Gradually pour in the chicken broth and milk, stirring constantly. Continue cooking and stirring until the mixture thickens, about 5-7 minutes. Adjust seasoning to taste.
- Transfer the chicken and vegetable mixture to a greased baking dish.
- In a mixing bowl, whisk together the flour, baking powder, and salt for the topping. Add the melted butter and milk, stirring until just combined.
- Drop spoonfuls of the topping mixture over the chicken and vegetable filling.
- Bake in the preheated oven for 25-30 minutes or until the topping is golden brown.
- Allow the casserole to cool for a few minutes before serving.
