Ingredients:
For the Pie Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the Banana Filling:
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups whole milk
- 4 large egg yolks, beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 3 ripe bananas, sliced
For the Whipped Cream Topping:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions:
Prepare the Pie Crust:
- Preheat your oven to 375°F (190°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated.
- Press the crumb mixture into a 9-inch pie dish, covering the bottom and sides.
- Bake the crust in the preheated oven for 8-10 minutes or until it’s set. Allow it to cool completely.
Make the Banana Filling:
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Place the saucepan over medium heat and bring the mixture to a boil, whisking constantly.
- Once it boils, continue whisking for an additional 1-2 minutes until the mixture thickens.
- Remove the saucepan from heat. Gradually whisk about a cup of the hot mixture into the beaten egg yolks to temper them.
- Return the egg mixture to the saucepan, whisking constantly.
- Place the saucepan back on the heat and bring it to a gentle boil, stirring constantly. Allow it to boil for 2 minutes.
- Remove the saucepan from heat and stir in butter and vanilla extract.
- Let the filling cool for a few minutes, then stir in the sliced bananas.
- Pour the banana filling into the cooled pie crust. Cover the surface with plastic wrap, directly touching the filling, to prevent a skin from forming.
- Refrigerate the pie for at least 4 hours or until it’s set.
Prepare the Whipped Cream Topping:
- In a chilled bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
Assemble the Banana Cream Pie:
- Once the pie is set, remove the plastic wrap.
- Spread the whipped cream over the banana filling, covering the entire surface.
