Paleo Chicken Marsala
On December 14, 2023 by userHere’s a delicious recipe for Paleo Chicken Marsala. This version of the classic Italian dish is made without dairy or grains, fitting well within the Paleo diet guidelines.
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1/2 cup almond flour
- 2 tablespoons coconut oil or ghee
- 8 oz cremini or baby bella mushrooms, sliced
- 3/4 cup chicken broth (preferably homemade)
- 1/2 cup full-fat coconut milk
- 1/2 cup Marsala wine
- 2 tablespoons arrowroot powder (or tapioca starch) for thickening
- Fresh parsley, chopped, for garnish
Instructions:
- Prepare Chicken:
- Season the chicken breasts with salt and black pepper. Dredge each chicken breast in almond flour, shaking off any excess.
- Cook Chicken:
- In a large skillet, heat coconut oil or ghee over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Mushrooms:
- In the same skillet, add sliced mushrooms and sauté until they release their moisture and become golden brown.
- Deglaze Pan:
- Pour Marsala wine into the skillet to deglaze it, scraping up any browned bits from the bottom of the pan.
- Create Sauce:
- In a small bowl, mix arrowroot powder (or tapioca starch) with a couple of tablespoons of the chicken broth to create a slurry. Stir until smooth.
- Add the remaining chicken broth, coconut milk, and the arrowroot slurry to the skillet. Bring the mixture to a simmer, stirring constantly until the sauce thickens.
- Return Chicken to Skillet:
- Return the cooked chicken breasts to the skillet, spooning some of the sauce over them. Simmer for a few minutes to allow the flavors to meld.
- Garnish and Serve:
- Garnish the Paleo Chicken Marsala with chopped fresh parsley.
- Enjoy:
- Serve the Chicken Marsala over cauliflower rice, zucchini noodles, or your favorite Paleo-friendly side, and enjoy this flavorful and comforting dish!
