Essene Bread

Ingredients:
- 2 cups whole wheat berries (wheat berries are the whole kernels of wheat)
- Water for soaking
- Optional: Sea salt or other seasonings to taste
Instructions:
- Sprouting the Wheat:
- Rinse the whole wheat berries thoroughly under cold water.
- Place the wheat berries in a large bowl and cover them with water. Allow them to soak for about 8-12 hours or overnight.
- Drain the soaked wheat berries and rinse them again.
- Sprouting Process:
- Transfer the soaked wheat berries to a sprouting tray or a large glass jar with a breathable lid or cheesecloth secured with a rubber band.
- Rinse the wheat berries twice a day, draining excess water each time.
- Continue this rinsing process for 2-3 days until you see tiny sprouts emerging from the wheat berries.
- Grinding the Sprouted Wheat:
- Once the wheat berries have sprouted to your desired length (usually about 1/8 to 1/4 inch), grind them using a food processor or a grain mill. You want to achieve a dough-like consistency.
- Forming the Bread:
- Take the ground, sprouted wheat mixture and shape it into small, flat rounds or loaves.
- Dehydrating or Baking:
- There are two common methods for finishing Essene bread: dehydrating or baking.
- Dehydrating: Place the formed bread on dehydrator trays and dehydrate at a low temperature (around 115°F or 46°C) for about 12-24 hours until the bread reaches the desired dryness.
- Baking: If you prefer to bake the bread, preheat your oven to the lowest setting (around 150-170°F or 65-77°C) and bake for several hours until the bread is dry but not toasted. The goal is to keep the bread in a “living” state, preserving its enzymes and nutrients.
- Cooling and Storing:
- Allow the Essene bread to cool completely before storing it. Store the bread in an airtight container in the refrigerator.
Essene bread is dense and has a chewy texture. It’s often enjoyed as a nutritious, raw, and living food. Keep in mind that the sprouting and dehydrating process may take some time, but many people find the nutritional benefits of Essene bread to be worth the effort.
