Ingredients:
- 4-6 medium-sized Yukon Gold potatoes, peeled and sliced into 1/3-inch rounds
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 cup chicken or vegetable broth
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
- Chopped fresh parsley, for garnish (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 500°F (260°C).
- Prepare the Potatoes:
- Peel and slice the potatoes into 1/3-inch rounds.
- Melt the Butter:
- Melt the butter in a microwave-safe bowl or on the stovetop.
- Season the Potatoes:
- In a large bowl, toss the potato slices with melted butter, minced garlic, dried thyme, salt, and black pepper until the potatoes are well coated.
- Arrange in a Baking Dish:
- Arrange the seasoned potato slices in a single layer in a baking dish.
- Bake:
- Bake in the preheated oven for about 15 minutes. The high heat will help create a crispy exterior.
- Add Broth:
- Carefully pour the chicken or vegetable broth over the potatoes.
- Continue Baking:
- Lower the oven temperature to 425°F (220°C) and continue baking for an additional 30-40 minutes or until the potatoes are tender and the broth has mostly evaporated. The broth will help create a creamy interior.
- Baste the Potatoes:
- Baste the potatoes with the remaining liquid in the baking dish a couple of times during the cooking process.
- Garnish and Serve:
- Once the potatoes are golden brown and crispy, remove them from the oven.
- Garnish with chopped fresh parsley if desired and serve immediately.
